 "Ken's" Spicy Harvest Gazpacho
The Wine Experience Wine Recommendation: Albarino or Sauvignon Blanc
If you love to chop, this recipe is for you! But feel free to use a food processor if you don't!
Ingredients:
2 cucumbers peeled, seeded and diced
3 large tomatoes, chopped
1 pablano pepper, diced
2 celery stalks, diced
3 cloves of garlic, finely chopped
1 yellow bell pepper, diced
1/3 cup extra virgin olive oil
1 48 oz. bottle of V8 vegetable juice
1 tbs Kosher salt
1 tbs ground black pepper
1 tsp crushed red pepper
5-6 dashes of your favorite hot sauce (I use Tabasco)
2 tbs Worchester sauce
1 pint low fat sour cream

Chop or dice all ingredients as indicated and combine all the veggies is a large bowl

Pour in the V8 while stirring until the desired consistency is reached, probably ¾ of the bottle

Add the salt, pepper, olive oil, red pepper, hot sauce and Worchester sauce

Stir well

Cover with plastic wrap and refrigerate over night

Serve chilled with a tablespoon of sour cream floated on top.
