Gazpacho Soup Recipe

"Ken's" Spicy Harvest Gazpacho
The Wine Experience Wine Recommendation:   Albarino or Sauvignon Blanc

If you love to chop, this recipe is for you!   But feel free to use a food processor if you don't!

Ingredients:

2 cucumbers peeled, seeded and diced
3 large tomatoes, chopped
1 pablano pepper, diced
2 celery stalks, diced
3 cloves of garlic, finely chopped
1 yellow bell pepper, diced
1/3 cup extra virgin olive oil
1 48 oz. bottle of V8 vegetable juice
1 tbs Kosher salt
1 tbs ground black pepper
1 tsp crushed red pepper
5-6 dashes of your favorite hot sauce (I use Tabasco)
2 tbs Worchester sauce
1 pint low fat sour cream

  1. Chop or dice all ingredients as indicated and combine all the veggies is a large bowl

  2. Pour in the V8 while stirring until the desired consistency is reached, probably ¾ of the bottle

  3. Add the salt, pepper, olive oil, red pepper, hot sauce and Worchester sauce

  4. Stir well

  5. Cover with plastic wrap and refrigerate over night

  6. Serve chilled with a tablespoon of sour cream floated on top.
